Do you ever remember seeing posters for exercise equipment in the 80s saying if you worked out for just 12 minutes a day, you too could look like the model in the poster? Well I figured if I did 12 minutes a day here in Paris, I too could have great results. But I’m not exercising. I’m piping.

An unusual thing happens in France every August. Just after the big three week sales that every store participates in, the Parisians lock their doors and flee for the countryside. It’s called la morte saison (the dead season), and as a foreigner, it’s challenging to deal with.

I’ve always loved champagne for its vivacious taste, effervescent bubbles, and sheer charm. But until now, I thought it was made like every other wine with the exception of a little carbon dioxide. I couldn’t be further from the truth. Here’s a little education for you on the making of champagne. I highly recommend reading this article with a glass of bubbly.
