Simple Summer Appetizers

If you're looking for some simple summer appetizers, then check out the video above for stuffed cherry tomatoes with basil lime goat cheese and summer guacamole in cucumber cups. Most people like to serve guacamole with chips, but I thought it would be fun to change things up a bit. I have cucumbers coming out my ears, so I slice them into 1 inch thick rounds, scoop out the centers using a melon baller or small spoon, and then stuff them with homemade guacamole. Not only are these portable and make great finger food, but the crunch of the cucumber pairs nicely with the smooth gacamole.

For the tomatoes, use a small melon baller to scoop out the seeds. If you don't have a melon baller, simply cut the tomatoes in half and pipe the goat cheese on each half. Look for cherry tomatoes that are at least 1 inch across, and they come in so many colors and varieties, you can really get creative!
