Calling All Hands

I will be researching several recipes for inspiration, but I realize you’re all creative people. Why not get some inspiration from you? Below is the list of ingredients we can use during the exam. Things like spices, butter, milk, cream, wine, thyme, shallots – the basics – can also be used. Items with asterisks are required in the dish while those without are optional. So bring on the suggestions. I’m ready to hear your ideas!

  • Sea bass*
  • Jumbo shrimp
  • Clams*
  • Black trumpet or chanterelles*
  • Snow peas*
  • Plum tomatoes
  • Potatoes
  • Eggplant*
  • Figs
  • Fennel
  • Red bell pepper
  • Limes
  • Lemons
  • Basil
  • Italian parsley
  • Marjoram

For the life of me, I can’t figure out how to serve figs with fish. If you come up with some ideas for pairing the two, more bonus points for you. And me!

I would worry more about combining figs with eggplant! I *like* sweet with fish (think salmon and maple syrup glaze). Why not a spicy fig compote (cloves, cinnamon, nutmeg, etc.) to go on top of a perfectly roasted sea bass filet? Now, about those chanterelles and eggplant... You're on your own!
