Proscuitto Wraped Figs

Makes 24 bites

24 black or green figs
12 pieces thinly sliced prosciutto
1 cup balsamic vinegar
5 oz Gorgonzola

In a saucepan, boil vinegar until reduced to syrup consistency.

Cut the stems off each fig and make a cross through the center of each, cutting half way down. Cut Gorgonzola into 1 inch chunks and stuff one chunk into the center of each fig. Lay a slice or prosciutto on a cutting board and cut in half lengthwise. Using one strip, wrap each fig.

Preheat broiler. Place figs on broil pan and cook until prosciutto crisps and cheese melts. Remove from heat and place on platter. Spoon balsamic reduction on figs.
