Whole Wheat Pizza Dough

Makes 4 12-inch pizzas


1 1/4 cup warm water, divided
1 packet active dry yeast
4 cups all purpose whole wheat flour
1 teaspoon salt
2 tablespoons extra virgin olive oil
1 tablespoon honey

Mix yeast and 1/4 cup warm water in a small bowl. Let stand 10 minutes to activate the yeast. Measure 3 ½ cups of flour into a large bowl and add salt. Add yeast, oil and remaining 1 cup water. Mix with a wooden spoon until a soft dough forms.

Place the dough on a lightly floured work surface. It will be slightly sticky. Gradually knead in the extra flour. Knead until the dough is smooth and elastic, about 10 to 15 minutes. Place the dough in an oiled bowl, cover with a clean kitchen towel, and let rise one hour in a warm place.

Preheat oven to 450 degrees. Knead the dough again for one minute. Divide the dough into four balls. Roll out the dough with a rolling pin into a circle. Top with your favorite ingredients.

Brush pizza crust on both sides with olive oil. Place on a baking sheet and bake 5 minutes. Flip pizza over and cook another 3 minutes. Remove pizza from oven and top with tomato sauce or pesto. Add cheese, vegetables or meat. Return to oven and let bake until toppings are hot, another 3 to 5 minutes. Slice and enjoy.
