Serves 6
3 1/2 tablespoons olive oil, divided
2 medium white onions, peeled, cut in half and thinly sliced
1 pound sirloin steak, trimmed of fat
10 ounces crimini or button mushrooms, stems trimmed and quartered
4 cups packed baby spinach leaves
4 cups packed baby lettuces
1 1/2 tablespoons fresh lemon juice
3 ounces blue cheese, crumbled
Salt and pepper
Preheat oven to 350 degrees. Heat a medium saucepan over medium heat. Add 1 tablespoon oil and when hot, add onions and a pinch of salt. Cook onions, stirring often, until caramelized, about 20 minutes. Remove from heat and set aside.
Season steak with salt. Heat a stainless steel pan over medium high heat. Add 2 teaspoons olive oil and when hot, sear steak on both sides. Place steak on cooling rack set over a rimmed baking sheet. Bake until desired donenesss, about 5 minutes (130 to 135 degrees) for medium rare. Rest 5 minutes, turning every minute.
Heat a medium skillet over medium-high heat. Add 1 teaspoon oil and when hot, add mushrooms. Cook without stirring 1 minute. Toss mushrooms with a pinch of salt and cooking another 4 minutes until tender.
Slice steak across the grain into thin strips. Toss spinach and baby with lemon juice and remaining oil. Season to taste with salt a pepper. Divide greens among plates; serve with onions, blue cheese, mushrooms and steak.
