Iceberg Wedge with Bacon and Blue Cheese

Serves 6

¾ c mayonnaise
¾ c lowfat or nonfat plain yogurt
2 T fresh lemon juice
1 T coarsely ground black pepper
1 t hot pepper sauce
1 c coarsely crumbled blue cheese
½ to 1 cup Buttermilk
6 slices good, thick cut bacon – not the kind in packages next to the hot dogs!
1 large head of iceberg lettuce
½ red onion, thinly sliced

Leaving the core in tact, cut the lettuce into six wedges.

Mix first five ingredients in medium bowl. Add blue cheese and stir until well blended. Add buttermilk until it reaches the desired consistency.

Cook bacon in large skillet over medium heat until golden brown and beginning to crisp.  Drain on paper towels and break into pieces when cool.  Pour off all but 1 T of bacon fat.  Add onions and sauté until they begin to brown.

Arrange lettuce on plates. Spoon dressing over. Add bacon and onions on top.  Dig in!
