Tete De Veau
This is the staff dinner. It's veal head that has been wrapped up, tied and poached. The skin and meat are peeled from the skul of a calf to make this lovely dish. And the chefs are crazy about it - especially the sections that come from the nose. The outside layer feels like jello yet it's sticky. Anyone for seconds?
