I had to commit murder in class for a lobster dish. I'm saying good bye to my lovely lobster before I do several terrible things to it.

Jamaque

This cake has two chocolate layers between a coconut mousse and a passion fruit/mango mousse. Not only did it look gorgeous, but it tasted out of this world!

Ballotine

I really didn't like this dish. Debone a chicken, stuff it with a meat mixture and foie gras mousse (which coincidentally smells like cat food). Then wrap it up in plastic, boil it in water and let it sit overnight. Then clarify the boiling liquid and add gelatin to make aspic. I did however have a great time decorating the plate!

Milk Chocolate

My first chocolate attempt. I don't think I temered the chocolate properly because I did get little swirls after they set. But at least they tasted good!

Dark Chocolate

My next attempt with dark chocolate turned out very well. These have a pistachio center and were quite yummy!

Truffles

Dark chocolate ganache enrobed in dark chocolate and rolled in unsweeted cocoa powder. Extra rich.
