School
Here is a picture of the school. It's a five story, non-descript building on a quiet street in the 15th district.

Hollandaise
After being repaired twice, my hollandaise finally stays together. I do get marked down because it's a littl thick. It's served with poached hake steaks and turned vegetables.

Opera
In pastry class we practice piping quite a bit. Evidently on our final exam in Intermediate Pastry, we have to write Opera just like this. Opera is a famous French cake made with lots of chocolate and it has the word Opera written on the top. My attempt needs a little work, but my first attempt isn't too bad!

White Chocolate
When the chef isn't looking, Sergio dips into the chocolate.

Caramelized Pear Tart
This tart has a sweet pastry crust, caramelized pears inside and meringue on top. -

On the right is Chef Cotte, our primary pastry chef for basic classes, and on the left is my favorite sub.

Genoise Moka
This is a plain genoise cake painted with coffee syrup and frosted with coffee butter cream.

Brioche Beating
Here we're beating our brioche dough against the counter to develop elasticity. The blob on the right is Sergio's dough. He got his suck on the ceiling a couple times. -
Ashley
Ashley got so hot in class she decided to cool off in the refrigerator underneath the counter. -
Sacre Coeur
Saturday we decided to have a picnic at Sacre Coeur and watch the sun go down. Left to right: Nina, Tse, Dominque and Tae.
